Old and New French Salad

When I was in France a few years back they served a great green salad with a poached egg on top.. Then fresh herbs and a vinegar and oil dressing. They did want to add chopped bacon, but I declined..Try your hand at this..Great for a late night supper with french bread. A small amount of champagne vinegar is nice to add to the poaching water. Be sure and bring the water to a boil and then turn down to simmer and add your egg in. Add a small platter of cheese and olives on the side. Whole Foods is carrying a cracker that I love, “Raincoast Crisps.” They are awesome and quite a different treat. They are addicting.
