New Tuna Salad

Having committed myself to this low-fat diet I have done pretty well. There is a health food store in Joplin, “Suzannes”. She use to have a lady that made the most wonderful tuna salad. They deleted that part of the store, she did manage to tell me how they made it. The true secret to the salad is a good quality low fat mayonnaise..which I have used Hellmans. Second is a spice you can get almost anywhere, “Spike”.

1 can of drained white Tuna
1/2 cup of Hellmans Light Mayonnaise
1/4 cup grated zucchini
1/4 cup sunflower seeds
1 tsp of sweet relish
1/4 cup of red bell pepper chopped small
1 good size tsp. of Spike

Mix all and refrigerate. The photo above has sliced hard boiled eggs and the bread that is used is Alvarado Street Bakery, Sprouted Multi Grain…this bread is available at most health food stores. “Whole Foods”
