Udon with Tamari Roasted Vegetables and Almonds
Udon is probably one of the planets best noodles. I crave them, so I know that I will be much happier if I just make them myself. I went out the other evening to a local oriental restaurant. The place is beautiful and the service was impeccable, but the food was really not good.. I am keeping my fat intake very low and no meat tonite.. Here it is and it was really good… I have the simplest of taste, I am satisfied with the very best!
In a medium pan bring your water for the noodles to a boil, put them and simmer til almost done.. meanwhile in a non-stick skillet
Add in order
1/2 of a sweet onion chopped in large dice
2 carrots peeled and largely diced
3 cloves of garlic peeled and sliced thin
almonds, rough chop
fresh parsley
tamari sauce
get skillet hot and add onion then carrot.. cook til you see it wilting and carmelizing. Then add the almonds and garlic, cook 5 minutes longer and add 1 tab of tamari and this will evaporate.. Then add about 3 tab of noodle liquid… let it evaporate, then more tamari.. Drain noodles and add them to the skillet and add parsley to serve.
