Indian Sweet Rice
Sweet Rice is probably one of my all time favorite things to eat. Who ever thought this up must have had a inspiration from G-d himself. The flavors explode and it goes from Cardamom to sweet to ghee and from sugar to almonds and of course the Basmati rice. You cannot skimp and add normal white rice.. Basmati is in a class of its own. Basmati is to India what pinto beans are to south texas and mexico.. Get yourself some rice and spice, go to work.
1 1/4 cups of basmati rice and 2 1/2 cups of water, soak rice in water for 20 minutes set aside mean while
Take 1/4 tsp of saffron threads and lightly toast in a skillet til maroon, be careful not to burn. The put in small dish and crush fine, add 1 to 2 tab of cream to this and mix, set aside also. After the 20 minutes has passed, drain the rice, reserving the water.
In med to large saucepan melt
3 tab of ghee
add 10 crushed cardamon pods with seeds
1 stick of cinnamon
a inch piece of ginger grated fine
cook this on med heat til cinnamon un-curls some. Afer this, add rice to the ghee mixture. Then add 1/2 cup of slice almonds and 1 handful of raisins. Then the reserved water. Bring to a boil and cover and put on simmer for 20 minutes. At the end of 20 minutes un-cover and add saffron and sprinkle 1/3 cup of sugar over top and place the lid back on.
