Yam and Butternut Squash Curry
Having a large amount of snow and ice, no traveling in the car today!?! I get this insatiable appetite for curry and spice. Must be something in my DNA! Or shoveling all the snow! Looking through blogs and cookbooks I settled on a Yam Curry concoction of my own.
Here is the recipe for the Yam Curry
oil or ghee
2 peeled yams cut up in small cubes
1/2 butternut squash, peeled, cut in small cubes
2 garlic cloves minced
1/2 of onion chopped
1/2 red bell pepper chopped
1 tsp of black mustard seed
1/2 tsp masala
1 tsp of curry powder
1/2 tsp of cumin seed
1/2 tsp of tumeric
salt
In med skillet add about 2 tab of oil on med heat and add the mustard seeds and cumin seeds til they start popping. Then add the onion and red pepper and garlic, and the squash and sweet potato, and then seasonings. This needs to be cooked in the manner of forming a crust on the vegetables. Around 30 minutes on med heat. Serve with rice and pita bread that has been grilled.
