One of the most wonderful cookies I had ever eaten were Pizzelle’s. Originating in Italy, they are a relative to the Krumkake from Germany. These cookies from italy are sometimes flavored with anise or vanilla and even cinnamon.. I have rolled them up when they are warm with a form and when cooled pipe whipped cream in the center..Similar to a cannoli. But these are buttery crisp and with a wonderful design and flavor. They are beautiful.. Dipping them partially in chocolate is great too. Use your imagination. You can even stack these with a filling in between… Coming up this week is Chanukah and we will be feasting and eating lots of goodies..Latke’s and brisket and with alot of wonderful side dishes… Growing up we celebrated Christmas in our home and we had many things from Germany and Italy. Now I incorporate alot of wonderful holiday essentials.. A few years back it was very hard to find a pizzelle iron or a iron to make french cookies.. Now I see them frequently.. I have several recipes for pizzelles and french cookies. So if you want more than this one let me know and I will be glad to send it to you. 3 eggs beaten
1 stick of unsalted butter melted and cooled
1 tsp of vanilla
2 cups of four
1 1/2 tsp of baking powder
1 cup of sugar
Mix all well and let sit to room temp.
Follow manufacturers directions for iron.. when ready add 1/2 tab to 1 tab to iron and cook. I add a small amount of cinnamon to my batter.. Use really good vanilla and butter, you will not be sorry.. I like Land o Lakes butter, and I use Gold Medal or White Lily.
