Italian Crespelle’s and More
This weekend I was thinking of all kinds of food. A little cooler sparked the reason for some different tastes. I had some really nice Ricotta so I decided to go ahead and make some Ricotta Crespelles with a Red Sauce. Crespelle’s are a Crepe like pancake that can be stuffed with a majority of ingredients. Here I used Ricotta with some Mozzarella and Parmesan to finish. I have started using crushed tomatoes and tomato paste as my base for sauce and it is so much better.
I start with 2 eggs and about a cup of milk, salt and 1/2 cup of flour. Mix well and you want the consistency of thin pancake batter. You want the Crespelle very thin. Start in a well oiled skillet and just make them at a pretty high temp. You want them to get golden in color. Fill lighter side and roll, lay in a prepared dish, meaning use some red sauce on the bottom so they do not stick. Place sauce on top and then bake for 45 minutes. Serve.
More is my favorite salad that I make with Israeli Couscous and Asparagus. The picture of it turned out very nice.
