Vada, Spicy Chickpea Patty
Vada is a southern Indian fritter made of pastes and spices. This Spicy Chickpea patty is a cousin to Vada. They refer to these as “street food” and some what like a falafel. These are great hot or cold and served with a Tamarind dipping sauce or plain. They serve as a substitute for meat and a wonderful alternative. Living here in Kansas City area is a great spot to purchase spice and flours for whatever I need in Indian cuisine. Tonight I am having a green salad with Vada’s. This recipe is from the Mangoes and Curry Leaves Cookbook.
2 cups of chickpeas dried and soaked in water overnite, drained
about 3/4 cup of onion
2 to 3 tab of minced cayenne green peppers
2 tsp of minced fresh ginger
1 1/2 tsp of salt
1 cup of fresh coriander
Make sure that the beans are drained and place in a food processor along with the rest of ingredients. Process to look like corn meal. Make into desired patties and fry in oil. I used vegetable oil for frying.
